Making the perfect steak is no easy task. Because there are so many varieties of steak, each with their own flavor and texture, and because everyoneâ??s tastes are a so different, you must look at making the perfect steak as an evolving art form.

It will take practice. Reputable Texas chefs take years perfecting their dish and many of the finest Dallas colleges even devote classes to making great steaks.

Step 1 â?? Decide on Your Favorite Cut of Beef

There are eight cuts of beef each offering varying degrees of tenderness and flavor. The most popular cuts for a grilled steak include: short loin cut for porterhouse, t-bone, and tenderloin steaks; sirloin cut for sirloin steaks; and, the flank cut for flank steak, which is very lean and full of flavor.

Step 2 â?? Understand Meat Grades and How to Choose a Nice Piece of Meat

Texas chefs will normally choose prime grade beef because it is the best quality of meat available. Choice and select grade beefs are also available at the grocer or butcher, but if it is in your budget, always go with the choice grade.

Also, do your best to assess the meatâ??s marbling or fat content. Large pieces of fat mean the meat is flavorful but tough, while a cut of meat with no marbling will be tender and have little flavor. The goal is to find a cut of meat with thin layers of fat for the perfect balance.

Step 3 â?? Determine Which Style of Steak You Prefer

Do you prefer a steak with many toppings or a simple steak dish with a little salt and steak sauce? Chances are you enjoy a full variety of steak dishes. Test out recipes along with cooking methods to find what you like best. Here are just a few examples of different steak dishes:

Step 4 â?? Itâ??s All About Marinating

A marinade will not only add flavor, but it will make your steak juicy too. There are a variety of marinade recipes that you should try to see what you like best, but the two most important elements of proper marinating include lemon juice and at least four hours for your meat to rest.

Step 5 â?? Keep an Eye on the Grill and the Clock

A good steak will only be prepared one wayâ??on the grill. And most all cuts of meat will take no longer than 30 minutes on the grill. A thermometer is the best method for deciding when a cut of meat is ready. The core temperature of the meat should be between 120 degrees (rare) to 165 degrees (well done).

Once you have prepared the same steak meal a few times you will learn how to improve on your cooking method and on the items you choose to complement the meat. Just like in all types of cooking, donâ??t be afraid to take advice from the experts. Some people prefer charcoal grills over gas grills because they are easier to transport and are safer to use than gas. While there are differences in opinion and preference among grillers, it still remains that charcoal grills are here to stay. 1. Cooking Space

First of all, you have to determine how much space you need for grilling. If you are grilling for a small family of three, you will do well enough with a 75 square-inch grill. You will have to consider larger grills if you are cooking for more people. It doesn’t make sense if you bring a puny sub-75 inch grill to a large picnic. Remember that the size of your grill increases the amount of items you can grill exponentially. Just looking at the grill won’t give you a clear idea on how big the grilling area is. Some grills have a warming rack that increases the perceived size of your grill.
2. Portability

- Get grills that have wheels
- Try choosing grills whose parts are ergonomic and efficient
- Lessen the risk of damaging your grill when transporting
- Your grill also has to withstand the rigors of outdoor use
- It does not pay to purchase a flimsy looking grill – go for those that are durable and lasting
3. Convenience

Some charcoal grills come with their own igniters. Try choosing grills that have this option. Other grills need lighter fluid to fire up. With the built-in igniter, you will not need lighter fluid anymore. On the other hand, you may want to avoid lighter fluid altogether. Some people dislike the taste and smell this fluid adds to the grill. If you must, use alcohol instead. It burns odorless and does not ruin the flavor of your food. Choose grills that allow you to easily access the ash pan. This makes cleaning the grill a lot easier. It also lessens the amount of ash flakes that may settle in your food. Also, lids are a very important part of the grill. Choose a grill that has a lid to keep the heat trapped within the grill. This allows for faster and smokeless grilling.

4. Quality

The materials used in making the grill are also very important. Some grills are made of material that easily corrodes or does not stand up well against the elements. Stainless steel grills hold up remarkably well to both the weather and the heat of the grill. Try avoiding painted grills as the paint may easily flake of. Although lightweight, durable materials are hard to come by among grills, you would do best to look for such. Remember, though, that first and foremost, the most important built characteristic you are looking for in a grill is durability.

It is time to take back the kitchen, but in a creative way!

How To Have The Perfect Barbecue

I’m never more delighted than when I get invited to a barbecue cookout at a friends house, not only because it’s the way of cooking that I prefer but also because it’s a great opportunity to have a chin wag and a glass of “pop” with folks that I maybe only get to see once or twice a year.

I’m really fortunate to be part of a great bunch of lads, one group from my school days and another set from university and everyone gets on really well together. We all live in different areas of the country so it’s difficult to keep the contact and a barbecue cookout in the summer sure helps. It keeps all the kids outdoors as well which saves on the clearing up!

Friends for over twenty years, barbecue parties every summer yet still no one can cook a decent grill. I’m delighted to attend but as I turn up my eyes suddenly dilate with horror seeing chicken wings dowsed in flames and worst of all, one of my friends expecting me to eat them!

It’s probably no wonder that as soon as I turn up I wrestle the tongs off him and get the whole food rack far away from the grill for a good 15 minutes and let everything settle down.

The flames appear because the coals are not ready, fat starts to drip and up it goes! The more flames, the more fat and the more fat, the more flames. Food black on the outside, raw on the inside. Have you been there? Well here are my recommendations so that you never have to go there again.

Whether it’s a charcoal or gas barbecue grill it’s all about patience and the preparation of the coals. In a gas grill, the flames heat up the lava bricks and it’s the bricks that radiate the heat to cook the food so the simple tips for gas:-

1. Give it time and gas on full whack to get the coals up to temperature.

2. When the coals are hot and you’re ready to cook, turn the gas down just to maintain the temperature in the coals and keep them well away from the food.

Despite me saying be patient, gas is still wonderfully quick and convenient to have a barbecue but never should it be instant. Anyway, why hurry?

For charcoal barbecue grills there’s a certain knack to preparing the fire:-

1. Pile up the charcoal to get it all burning at the same pace
2. Coals are ready when they are white (not black)
3. Before cooking, spread the coals out and don’t worry, they will still give off heat.
4. Start off with the food rack on its maximum height and bring it down gradually.
5. If you’re cooking on a kettle, remember to reduce the aperture of the bottom draft.

Not only does it take patience to get the perfect BBQ but it also takes time and experience – some of my friends clearly haven’t mastered it after 20 years! So please don’t give up, it really is worth the effort when you get it right.

One final tip whilst you’re in training – put your food in a barbecue basket. If you do get some flames you can lift large quantities of food simultaneously off the grill without too much hassle.
